1. Make a pancake batter with milk, eggs, flour and a little salt. Leave to stand for 20 min. 2. Peel the zucchini, grate finely, add salt, let it sweat and squeeze out the water. I do it in a sieve with a spoon. 3. Add the zucchini to the batter and fry the pancakes in a little oil in a hot frying pan. 4. Brush with tartar sauce, ketchup or mustard, fill with ham and cheese, roll up and serve.
