Zucchini fritters with minced meat

ingredients

400 g minced veal 1 pk smaller zucchini 2 pk eggs 1 tbsp baby semolina 1 tsp salt black pepper breadcrumbs oil

Crunchy on the outside, soft on the inside…

Grate the breadcrumbs, sprinkle with salt and let them sit for 15 minutes to let the water out.

After it has rested, “wring” it out with your hands, add the minced meat, eggs, semolina, salt, pepper and mix everything thoroughly. I usually let the finished mixture stand for 15 minutes to let the flavours come through nicely.

Prepare a frying pan with oil and with your hands form fashirs, which you lightly coat in breadcrumbs. Bake until golden on both sides.

For a healthier version, you can also bake them in the oven on a baking tray with paper and you only need to drizzle them with a little oil.
