Zucchini curry with nuts
ingredients
3 tbsp oil 2 tbsp butter 2 pcs onion 6 cloves garlic 2 handfuls walnuts 1 kg zucchini 1/2 KL curry pepper 1/2 KL ground turmeric 1 KL ground chilli 1 KL cardamom 8 pcs cardamom 1 KL mustard seeds 300 ml vegetable stock 50 ml cooking cream
steps
1. Crush the cardamom and mustard seeds in a mortar and pestle to a powder. Discard the cardamom skins. 2. Heat the oil and butter in a pan and add the onions. Sauté for about 3 minutes and add all the spices except salt. 3. Add sliced garlic and diced zucchini. Sauté until golden for 10 minutes. 4. Pour broth over everything and add a handful of nuts. 5. Simmer for 20 minutes and add room temperature cream. Cook for another 5 minutes and season with salt to taste. 6. I recommend rice as a side dish. Enjoy!
