Zucchini Chinese style

500 g zucchini 200 g eggplant 1 pk tomato 3 pk garlic 1 pk onion 2 handfuls peanuts 1 handful sterilized corn 2 tbsp oil 3 dl water 3 tbsp honey 1 tbsp soy sauce 2 tbsp turmeric 2 tbsp turmeric 1 tbsp ground red pepper 1 tbsp cornstarch salt
procedure
1. Fry the onion in oil and add the sliced garlic. Sauté for about 2 minutes. 2. Add the sliced zucchini (with skin on) but without the seeds. Toss and then add the sliced eggplant. 3. Add the chopped tomato and a handful of sterilized corn. 4. Season with ground red pepper, turmeric and soy sauce. 5. Pour water (1,5dl) over everything and stir in the peanuts. Simmer for about 20-30 minutes until the zucchini is soft. 6. Sweeten with 1 tbsp honey. 7. Mix 1 tbsp cornstarch with 1,5 dl water and pour it all slowly into the vegetable mixture. Add salt to taste. 8. Enjoy!
