Zucchini and Parmesan Rösti: Perfect for the diet!

Here is the recipe for zucchini and parmesan röstis, tasty and light patties, easy to make and perfect to serve with a meat or fish dish.
These röstis are perfect if you are on a diet, we bake them in the oven without fat, accompany them with a good yogurt sauce for more taste.
Ingredients for 4 people:
500 g zucchini 1 egg 40 g flour 40 g grated parmesan parsley Salt and pepper
Preparation:
Wash the zucchini well then grate them, then salt them and let them drain in a colander for 10 minutes. It is essential that the zucchini lose as much liquid as possible.
Put the zucchini in a bowl, add the egg, flour, grated parmesan, chopped parsley, salt and pepper and then mix everything together.
Place heaps of the zucchini dough on a baking sheet covered with parchment paper, then flatten slightly with the back of the spoon to form patties.
Then put the zucchini and parmesan röstis to bake in a preheated oven at 180° for about 20 minutes, turn the patties over halfway through the baking.
