Zubáč with anchovy butter

2 pcs fillets of zander, boneless 3 tbsp butter 1 tbsp anchovy paste a little chives

1. Leave the butter to soften at room temperature, add a tablespoon of anchovy paste and mix thoroughly until smooth. Spread the anchovy butter on the bottom of the baking dish and place the cleaned zander fillets on top, and brush the top of the fillets with the butter as well. Bake in a preheated oven at 160 °C for about 9-10 minutes. 2. Let the fish rest for about half a minute before serving. Garnish with chopped chives, lettuce and a drizzle of the anchovy butter on the plate. Serve with potatoes.
