Znojemská beef roast with rice

Sprayed beef braised on onion base and served with sauce prepared from the fat.

Ingredients:

750 g of beef (peeled shoulder) 150 g pickles 750 ml beef broth 100 g of bacon 3 tbsp smooth flour 3 tablespoons butter 2 tablespoons lard 2 pcs small onions ground pepper water tr>

salt For rice: 250 g rice 2.5 l water salt

Procedure:

1. Stuff the cleaned meat with bacon cut into fries, salt and pepper slightly, cut the peeled onion into cubes
2. In a larger pot suitable for baking, fry the chopped onion in hot lard and sear the meat on all sides, cover with water, place in a preheated oven at 160 °C and simmer under the lid until tender (about 90 minutes), turning occasionally and basting with the fat, basting with water as needed
3. Then remove the roasted meat, wrap in foil and leave in a warm oven
4. Pour the stock into the pot, heat, stir in the flour and butter, boil for 15 minutes, strain, salt and pepper
5. Finally, add the sliced cucumbers to the warm sauce and stir
6. Pour the sauce over the sliced meat and serve with boiled rice.

Rice preparation:

1. Rinse the rice first in warm water (this will get rid of impurities, starch and will not be sticky after cooking)
2. Stir and cook over a low heat under a lid until tender (about 25 minutes, depending on the type of rice)
4. Drain the rice, rinse it with cold water and let it drain
5. If you serve the rice as a side dish, warm it in a little butter.
