If you dread the thought of making bread at home, this is the recipe for you, just as it is for easy pita bread. But in this case we play with a very important advantage: we do not have to think about fermentations. Basically because it has no yeast, we are talking about an unleavened bread whose only ingredients are flour, salt, yogurt, a little water and baking powder that will give us a bit of fluffiness when we cook them. They have nothing to do with the delicious (and also easy) Kaiser type muffins but with the English crumpets, although we will never accompany our yogurt flatbreads with tea.
In Spain this bread is not so well known but it is in Eastern countries and also in Latin America and, the good thing is that it is made with little effort. We will only have to concentrate on a good kneading to unite all the ingredients without lumps and then the art will come at the time of stretching each of the loaves. You will have to make a roll and then flatten it completely with the help of a rolling pin.
The baking, to make it even easier, will be done without turning on the oven but with the help of a very hot pan or griddle and a knob of butter on it that will serve us to slightly flavor a bread that remains elastic, perfect to accompany but also to fill as a lahmacum.
On this occasion I have personalized the bread with some fresh parsley leaves placed just before cooking, but this dough allows you many options within it: nuts, herbs, spices or even seaweed or diced ham.
How to make yogurt flatbread in a pan
Ingredients
. Flour, 260 g Salt, 8 g Yogurt, 1 pc Biscuit baking powder, 2 teaspoons Water, 2-4 tablespoons Fresh parsley Butter, 40 g
Step 1
Place the flour with the salt and yeast in a bowl and stir well so that everything is well mixed.
Step 2
Add the yogurt and two tablespoons of water and start kneading, add more water if we see that the dough cracks and does not come together completely. Knead until smooth and silky, very soft and tender. Put in an oiled bowl, cover with film and let stand for 1 hour.
Step 3
Turn the dough out onto a floured surface and cut into 6 pieces. Each piece flatten it slightly and roll it on itself, that roll flatten it with a rolling pin and stretch it until you get a dough of about 2-3 cm
Step 4
Heat a frying pan over medium-high heat and add a little butter until it melts. Put then the bread with some crushed parsley leaves against it. The movement will be fast, the bread will be done quickly and you will have to turn it over with skill so that it also cooks on the opposite side.
Step 5
When browned on both sides, remove each loaf to a plate and place them one on top of the other making a pyramid. Cover with an odorless cloth to maintain the temperature and consistency before serving.
Tricks and tips
This bread is also perfect for making a sandwich from it, putting a bread on top and another bread underneath and toasting it at the last moment. It also allows us to make homemade wraps filled with everything we can imagine.
The dough can be frozen once toasted, but slightly, so that later when we want to consume this flatbread we only have to put it in the toaster or give it the last hit in the pan to give it the crispy outside but also warm it enough inside. If you want it to last more days I advise you to put it in a plastic bag and then regenerate it also in a toaster or passing it back through the griddle.
