Yellow pepper soup
ingredients
1 kg yellow pepper 2 pcs onion 2 cloves garlic 6 tbsp olive oil 200 ml whipping cream 800 ml vegetable broth to taste salt, ground black pepper
step
1. In a saucepan, fry the finely chopped onion and garlic in two tablespoons of hot oil. Add the peppers cut into smaller pieces, add 1/4 of the vegetable stock and the cream. Bring the soup to a boil and simmer over medium heat for about 25 minutes. 2. Turn the soup off the heat and blend with a stick blender. Bring to the boil once more, season with salt and pepper, and add the remaining stock and oil. 3. TIP: This soup is great with Balkan cheese.
