Yankee beef platter recipe

Ingredients:
3-4 lb. beef roast
1 onion, diced
3 carrots, diced
3 celery stalks, diced
1 garlic clove, minced
1/2 tsp. dried thyme
1/2 tsp. dried rosemary
1/2 tsp. dried oregano
Salt and freshly ground black pepper to taste
2 cups beef broth
1/4 cup all-purpose flour
2 tbsp. tomato paste
1/4 cup red wine (optional)
Instructions:
1. Preheat oven to 325 degrees F (165 degrees C).
2. In a large roasting pan, combine the beef roast, onion, carrots, celery, garlic, thyme, rosemary, oregano, salt and black pepper.
3. Pour the beef broth over the roast.
4. Cover and bake in the preheated oven for 3 to 4 hours, or until the beef is very tender.
5. Remove the roast from the pan to a serving platter and cover with foil to keep warm.
6. Pour the pan juices into a measuring cup and skim off the fat.
7. In a small bowl or glass jar, whisk together the flour and tomato paste. Add enough of the pan juices to make a smooth paste.
8. Pour the mixture back into the roasting pan and stir in the wine (if using). Place over medium heat on the stovetop and cook until the gravy has thickened.
9. Serve the beef roast sliced thin, with the gravy on top
