Winter Broccoli Soup

Recipe from Denmark for a tasty vegetable soup made with broccoli, potatoes, yoghurt and other ingredients.

Ingredients:

1250 ml vegetable broth 900 g broccoli 2 pcs larger potatoes 2 pcs onions 5 dl yogurt 2 tbsp olive oil ground black pepper salt

Procedure:

1. Peel the onion, dice it and fry it in well heated oil in a pot
2. Cut the peeled potatoes into cubes and add them to the onion, pour in the stock and let it simmer slowly
3. Boil the rest of the broccoli in lightly salted water, cook for about 2 to 3 minutes, add it to the soup and season with salt and pepper before serving.

Recommendation:

Serve broccoli soup with slices of toasted baguette or dry-toasted white bread croutons.
