Wiener Schnitzel

Fried veal fillets served on lettuce, garnished with olives, eggs and anchovies.

Ingredients:

Spare ingredients for 4 people: 600 g of veal rump 2 pcs of lamb smooth flour breadcrumbs oil milk salt frying fat

Procedure:

1. Cut 4 slices from the veal leg (not too thin), pat and coat both sides in flour
2. Soak them in eggs beaten with a few drops of oil, 2 tablespoons of milk and salt, coat them in breadcrumbs, press them lightly against the steaks, shake off the excess breadcrumbs

Supplement: Boiled potatoes and vegetable salad.

It is customary to serve them on lettuce leaves, garnished with lemon wedges, pitted olives, anchovy pieces and garnished with finely chopped egg yolks and whites of hard-boiled eggs and capers.
