White mushroom soup

2,5 litres broth 150 g fat 150 g plain flour 1,2 litres milk 1/2 g ground black pepper 1/2 g cumin 30 g salt 300 g fresh mushrooms

1. Simmer the cleaned, sliced mushrooms, spices and cumin in 1/3 fat under a lid until soft. 2. From the remaining fat and flour prepare a light roux, pour in the broth, whisk well so that no lumps remain and let it simmer – at least 1 h. 3. Then strain the soup, add the stewed mushrooms, soften with milk, let it simmer for about 5 min and season with salt.
