White asparagus soup

250 g asparagus 40 g butter 60 g plain flour 2 dl sweet cream 1 pk egg yolk to taste salt, mace,
step
1. Cut off the asparagus heads and boil separately in salted water. 2. Cut the remaining parts into smaller pieces, boil and mash. Drain the water from the asparagus heads and the cut pieces, thicken with light stock, boil well and stir in the mashed asparagus and heads. 3. Finally, season the soup with nutmeg, improve with cream and egg yolks.
