Welsh rabbit

Toast with a spread of grated cheese, butter, beer, milk and mustard.

Ingredients:

Ingredients for 4 people: 4 pieces strong toast without crust 250 g grated cheese (eidam, cheddar…) 60 g of butter 1.5 dl of beer (milk) 1 tsp

td>mustard

1/2 tsp ground sweet paprika 2 egg yolks

Procedure:

1. Prepare the toasts and put them in a warm place
2. Melt the butter in a very small pan
3. Stir in the grated cheese and then the beer (milk) a teaspoon at a time and stir until the mixture is smooth
4. Season with mustard and paprika and soften with egg yolks
5. Heat but do not boil
6. Spread the mixture over the toast and serve immediately.
