2 kg yellow melon 500 g crystal. sugar gelling agent

We bought the melon, it was not ripe, so it stayed in the fridge I cooked it into a delicious jam.
1.
Remove the skin from the melon, cut the flesh into cubes. Sprinkle them with a little sugar.

Mash the cubes, which will remain softened, with the resulting juice.

Place the thick mashed watermelon in a saucepan, cook for about 10 minutes. Later, add the gelling agent, mixed with the remaining sugar and cook together for another 5 minutes.

Fill the still hot jam into the prepared jars, cover and set aside in a warm place, upside down. The jam is delicious both for direct consumption and in desserts. Enjoy.
