A refreshing watermelon soup made from watermelon, peppers, tomatoes, cucumber and other ingredients, flavored with apple cider vinegar or a few drops of balsamic, spices and herbs.
Ingredients:
Ingredients for 4 servings:
4 cups
of seedless watermelon
1/4 cup
chopped cilantro or parsley leaves
3 pieces
chopped tomatoes
2 pcs
small chopped chillies without stones
2 pcs
spring onions
2 pcs
sliced cucumbers
1 pc
small peeled and chopped red onion
3-4 tbsp
apple homemade vinegar or balsamic
1-2 tbsp
olive oil
2 teaspoons
quality salt
juice of one lime
a pinch of cayenne pepper
Procedure:
Place 3 cups of watermelon, onion, cucumber, 1 chili pepper and tomatoes in a blender and blend until smooth
.Add 3 tablespoons of vinegar, olive oil, cayenne pepper and salt and blend a few times
Taste, if the mixture is too sweet, add another tablespoon of vinegar
In summer, put the mixture in the fridge and chill for about 1 hour
Use the rest of the watermelon, chilli, coriander or parsley, spring onions and add lime juice for garnish
Season with a few pinches of sea salt, pour the chilled mixture into bowls and garnish.
