Watermelon gazpacho

Summer cold soup made with watermelon, lime and cranberry juice and other ingredients, seasoned with herbs, garlic and onion, served with a few ice cubes, garnished with sprigs of herbs.

Ingredients:

1 piece of smaller watermelon 1 pk red fleshy bell pepper 1 pc garlic cloves 1 pc chillies 1/2 pcs onions 1 handful of fresh basil leaves 200 ml of cranberry juice 40-50 ml

td>lime juice ice cubes snaps of herbs for garnish

Procedure:

1. Cut the melon in half, then cut the flesh of one half into marigolds and remove the pits, separate from the wrapper, and cut the other half of the melon into balls
2. Place the peeled onion, the peppers, the cranberry and lime juice, the chilli without the pith, the garlic and the basil in the blender container and blend until smooth
3. Add the melon balls to the soup and place in the fridge to chill thoroughly
4. Always serve the soup with a few ice cubes, garnished with herb leaves or toasted and olive oil drizzled baguette slices.
