Walnut strudel
ingredients
70 g semi-coarse flour 70 g plain flour 70 g butter 1 teaspoon sugar 1/2 cube of yeast 1 pk egg(yolk) salt 1/2 liter milk
Filling
300 g ground nuts 3 tbsp powdered sugar 200 g apricot jam

We have been making this strudel for years. Even in my youth, my grandmother used to make me happy with this strudel and I was happy when the nuts and apricots that grew in our garden could be used in the cake. Nowadays, the neighbours sometimes come to our house for coffee and, as we make this strudel often, they like to munch on it. The coffee and the delicious strudel go well together. I recommend making this cake whenever the mood strikes 🙂 The sweet tooth always enjoys it. My husband takes this strudel here and there on business trips and it lasts him a week 🙂 I love to bake it, I love to give the joy in this form away. Every cake tastes good when made with love.

Mix milk, yeast, sugar together and make sourdough.

Mix 70 g semi-coarse + 70 g plain flour, 1 egg yolk, sourdough starter, 70 g butter( + milk as needed) and knead into a medium thick dough.

Sprinkle with plain flour and refrigerate.

After 60 minutes, remove and roll out to about 5mm thick. Spread with filling (nuts+apricot jam and icing sugar).

Roll the dough into a strudel shape, place on a greased baking sheet and brush with egg white.

Bake for 30 minutes at 180°C.

Remove from oven and sprinkle with icing sugar.
