Walnut roulade

Piscuit dough
5 pcs egg 7 tbsp fine granulated sugar 7 tbsp semi-coarse flour 1 tsp baking powder 2 tbsp water
Filling:
200 ml milk 40 g vanilla pudding powder 1 pk vanilla sugar 150 g butter 120 g powdered sugar 1 tsp um 5 tbsp ground walnuts
More needed
apricot jam (to spread on the biscuit) ground walnuts for sprinkling dark chocolate icing for decorating

Walnut roulade suitable for festive occasions or just for a coffee:))

Doughnut: in a bowl, beat egg whites with a pinch of salt, beat in sugar, egg yolks one at a time, water, sifted flour mixed with baking powder on a lower setting. I use our homemade eggs, that’s why the sponge cake has such a nice colour.

Spread on a 30×40 cm baking tray, on baking paper. Bake at 180°C for 25 minutes or as required. The figures are approximate. Leave to cool for a while and roll up with the paper. Leave to cool.

Filling. Leave to cool under cling film to prevent a skin from forming. Beat the butter, add the sugar and beat again. Beat in the cooled custard and um in batches. Beat until smooth and stir in the ground nuts. Reserve a little of the filling to spread on the surface of the roulade.

Remove the paper from the sponge, unroll and spread with apricot jam. Spread the filling and roll up again. Brush the surface with the discarded filling, sprinkle with ground nuts, decorate with dark chocolate icing and refrigerate.
5.
Slice and serve. Enjoy!
