Waldorf salad light,
ingredients
1 handful walnuts 2 pcs romaine lettuce 1 stalk stalk celery 1 pk smaller apple 1 handful grapes 1/2 pk lemon 150 g low-fat white yoghurt 1 tbsp brown sugar ground black pepper salt

Hailing from the heart of New York City, with over a hundred years of tradition, this nut and fruit salad comes in a lightened up version.

In a hot dry skillet, toast the nuts, a few dozen seconds on each side, stirring constantly. Then grate them into smaller pieces.

In a large salad bowl, mix the chopped romaine lettuce with the nuts. Add the finely chopped celery, apple and halved grapes. Season with salt and black pepper. Top everything with lemon juice and yoghurt (hence the ‘light’ in the name – the original adds mayonnaise). Finally, add the sugar and mix the salad thoroughly.

If you want to elevate this dish to a full course, add grilled halloumi cheese or chicken, for example. Seasonal roasted chestnuts are also a great accompaniment. Instagram: walrus.buko
