Wakame salad with tofu and mushrooms
ingredients
1 cup wild rice (Indian, black) 1 pk carrots 1/2 cup dried shitake mushrooms 1 cup seaweed 1/2 cup bell peppers (red, yellow, orange) 140 g tofu cheese salt sesame and olive oil
Sauce
2 tbsp white rice vinegar 1 tsp honey 2 tsp soy sauce 1 tsp sesame oil 1 tbsp grated ginger

Wakame is a high quality seaweed, popularly used in Japanese cuisine. This salad, slightly adapted to our conditions, has an interesting sweet and sour taste. It contains vitamins A, C, E and K, iron, copper, phosphorus, magnesium, iodine, folic acid, protein and healthy carbohydrates.

Prepare all ingredients.

Soak dried wakame seaweed in water according to package recommendations.

Soak the dried mushrooms in lukewarm water for 20-30 minutes. If you don’t have shitake, you can also use a commercially available dried edible mushroom mix.

Cook the rice according to the instructions on the package, season with salt or add organic broth. Cook black wild rice in triple the amount of water or broth and longer – 45 to 50 minutes; add mushrooms when it starts to soften.

Add carrots to the cooked rice with mushrooms – you can slice them, I made shavings. Stir and leave under the lid to finish cooking.

Wash wakame seaweed thoroughly under running water, chop a little and fry quickly in a frying pan, in a little oil.

Transfer the rice with the mushrooms and carrots to a large bowl. Add the wakame and paprika and mix well. I serve the peppers separately, as not everyone likes them.

Brown the marinated or smoked tofu briefly in a pan and gently stir into the salad.

In a small bowl, whisk together the vinegar, honey, soy sauce, ginger and oil.

Pour this mixture over the solid parts of the salad and toss.

Let cool for 2 to 3 hours to get the best flavor. This unusual salad will keep for up to 4 days in the refrigerator.

1 serving of wakame salad contains only 130 calories, 19 g of carbohydrates, no cholesterol, 3.5 g of fat – none of which is saturated, 3 g of fiber, 6 g of protein, 400 mg of sodium, 4 g of sugar. Good taste!
