VSea potatoes

The potatoes from the Mediterranean contain all the ingredients; all those wonderful southern flavours you long for in the rain; garlic, wine and fresh herbs.

Ingredients for four

600g of floury potatoes 1 dl of olive oil 2 cloves of garlic 3 dl of dry white wine; (or water + vinegar in a 4/1 ratio) 1 handful of fresh rosemary, sage, thyme or all together 1 teaspoon of salt Peel the potatoes and slice into fairly thin coins. In a large shallow pan (with lid), put the olive oil and take the potatoes to the heat. Chop the garlic and season with salt. Fry the potato slices for 10 minutes. Add the white wine and the fresh herbs. Close the lid and cook the potatoes until tender. You can add a little water to the pan if the food threatens to dry out.
