Vošouch – potato pancakes

Recipe from the recipe book of our grandmothers and great-grandmothers. Vošouch is a folk name for potato pancakes from Pilsen. In South Bohemia, potato pancakes prepared in this way are called Cmunda, in Podkrkonoší, for example, Sejkory.

Ingredients:

1000 g of potatoes 50 g of dried hub 3 pcsgarlic strips 2 pcs of egg

semi-coarse flour as needed majorana butter fat cumin pepper salt

Procedure:

  • Soak the mushrooms in water for an hour beforehand.
  • Peel the potatoes, finely grate them, boil them with boiling milk.
  • Squeeze out the water from the mushrooms, chop them into smaller pieces, saute them in butter until soft, add salt and pepper, and let them cool.
  • Stir the cooled mushrooms into the potatoes, add the eggs, crushed garlic, marjoram, pepper, salt, mix, thicken the dough with flour if necessary.
  • Scoop the dough, which should be thinner, with a spoon and spread it on a pan with melted lard, fry on both sides until golden.
  • Recommendation:

    Serve warm with sauerkraut. Mushrooms can be omitted, some families put them in, others don’t. Potato pancakes can also be supplemented with bacon cubes, sausages…
