Vorschmack with baked potato

Vorschmack gets its delicious taste from the goodness of the meat and the salt of the anchovies, which, after hours of simmering, blend into a perfect harmony.

Ingredients for eight

n.1 kg lamb shoulder or roast with bone in

600g lamb/lamb mince (venison); 1 onion 2 cloves of garlic 2 tbsp anchovy juice from a jar 4-8 anchovies 1 tbsp tomato puree1-2 splashes of cognac 1 tbsp butter pepper

At your service

8 baked potatoes (rosamunda) sour cream pickles beetroot (pickled beetroot is ok)

Oven for the oven. Put a cast iron skillet on the stove and butter it. Start to take up the lämpöä.

Peel and chop the onions in the pot. Add the garlic. Does not need to be fine as the Vorschmack will be ground at the end.

Add the lamb to the pot. If you don’t have the bone part, you may have to use a meat cleaver to cut the bone to fit in the bottom of the pot.

Add the anchovies and their juices to the pot, tomato puree and cognac to the pot. Season with pepper. Pour in the water so that the ingredients are covered. Bring to a boil on the stove, cover with a lid and then place in the oven with the heat lowered to 125 degrees. Let stand for a couple of hours and watch the oven to make sure the food doesn’t dry out.

Wash the potatoes well. Place on a piece of foil (one at a time). Cut cross slices, olive oil, salt and pepper into the potato pan; roll up the foil cores and place in the oven with the vorschmack.

It takes 1.5 hours more and the vorschmack can be removed from the oven. Put the potatoes back in the oven. The bone will keep lähteä tässä stage by lifting out. If there is still too much liquid, boil on the stove to dry it out.

Take a hand blender and blitz the meat dish to a smooth purée. The masters do this in the meat grinder.

Scoop the vorschmack into a serving dish, garnish with parsley and serve with baked potatoes, sour cream, pickles and beetroot.
