Edge cookies with cheesecake filling and raisins, decorated with crumble.
Ingredients:
Procedure:
1. Sift the flour into a bowl, make a well in the middle and mix the yeast with 1 tsp sugar in 2 tsp milk and let it rise
2. Before the yeast rises, grate the fat into the flour on a coarse grater, soak the sugar, salt and beaten egg yolks in the milk, then work everything thoroughly until the dough does not stick to the bowl or the cooker
3. Put the dough on a roller dusted with flour and roll it out into a large sheet
4. From the above batch you can cut up to 80 squares, in the centre of which you can put a curd filling of 500 g of curd with raisins
5. Join the dough, round it until it forms a loaf
6. Take an egg and make a dent in each loaf with it
7. Fill the dent with plum jam, slightly diluted with rum
8. On a plate or in a bowl, prepare the crumble ( ratio of about 100 g coarse flour, 70 g sugar, 70 g butter ) and press each crumble into it with the ‘fudge side’, first brushed with beaten egg white, so that the crumble sticks
9. Place the cakes on the baking trays and then let them rise
10. Bake them in a well heated oven until golden brown.
