First, prepare the rice noodles according to the package directions.

In a wok, heat turmeric in oil with brown sugar and add quartered onions.

Grow together until the sugar caramelises.

Remove from heat.

Place water in a large pot and add the beef bone along with the beef grill.

Gradually add fresh ginger slices, fennel, star anise, lime leaves, lemongrass, salt and fish sauce.
7.
Finally, add the pre-fried onions with turmeric and sugar.
8.
Slowly (just below boiling point) cook for 3 hours.
9.
In a bowl, prepare the cooked rice noodles along with finely chopped spring onion, leek, fresh coriander, bamboo shoots, quartered lime and beef.
10.
Serve immediately.
