Vichyssoise

Vichyssoise (read: višisoas), a leek soup originating from the French spa of Vichy. It is served cold, but it tastes great warm as well.

Procedure:
1. Cut the white parts of the leek into thin slices, the onion into small pieces
2. In a large pot, fry the leeks and onions in melted butter
3. Pour the broth over the soft leeks, bring the soup base to a boil, add the diced, peeled potatoes and cook until the potatoes are soft
4. Stir the slightly cooled soup, let it cool thoroughly in the fridge
5. Season the cooled soup with pepper and salt to taste, finally stir in the cream
6. Serve the individual portions garnished with fried leek slices or chives.
