Venison Pesto

Simplified cubes of venison (venison, fallow deer, mouflon …) together with Vegetable Recipes and other ingredients, served alone or with slices of fresh bread.

Ingredients:

1 kg neck or shoulder meat from roe or red deer, mouflon, fallow … 500 g of potatoes 4 pcs tomatoes 3 pcs meat peppers 3 pcs garlic cloves 2 pcs onions 3 dl red wine sweet paprika mayonnaise lard cumin pepper salt

Procedure:

1. Wash the deblanched venison well and cut into pieces
2. Fry chopped onion and garlic in lard, add sweet paprika, stir and add chopped venison
3. Add salt, pepper, cumin, marjoram and fry on all sides
4. When the juices have dried up, pour a little wine, add peeled, chopped tomatoes, simmer and again pour wine and cover the pot with a lid, let it simmer on low heat
5. When the meat is half soft, add the sliced potatoes, pepper pods, pour the rest of the wine and simmer until tender
6. Serve alone, who wants to, can add dark bread.
