Whole wheat pancakes stuffed with roasted Vegetable Recipes with salad herb cheese. A light summer breakfast.

Shortly fry chopped onion in oil, add sliced mushrooms and sauté for about 5 minutes until mushrooms release water. Then add the diced peppers, grated peeled zucchini and finally the tomato pieces.

Season the mixture lightly with salt, pepper, herbs and cumin. Stir lightly, fry together for 2-3 minutes and remove from heat.

Finally, stir the diced herb cheese and chopped scallions into the hot mixture.

Fry the wheat pancakes on both sides in a dry frying pan, arrange them on plates, layer the vegetable-cheese mixture and transfer to an egg dish. Serve warm. Enjoy!
