A light fit recipe of roasted peppers, red chicory, cherry tomatoes, olive oil, basil and mozzarella.
Ingredients:
4 pcs
2 red and 2 yellow bell peppers
2 pcs
basil leaves
90 g
mozzarella
red chicory
cherry tomatoes
olive oil
salt
Procedure:
Cube the mozzarella, season lightly with salt, drizzle with olive oil and add the chopped basil.
Coarsely chop the peppers, sprinkle with salt and olive oil and put them in the oven. As the edges of the peppers start to blacken slightly, remove from the oven and place in a plastic bag for a while. The peppers will get sweaty and easier to peel.
Peel and dice the peppers, stir in the finely chopped cherry tomatoes and red chicory.
Toss the mixture and season to taste with salt and olive oil. Serve with pre-made mozzarella and fresh bread.
