Vegetable Recipes in peanut sauce

800 ml vegetable broth 1 pk small zucchini 1 pk medium carrots 4 tbsp peanut butter 3 tbsp tomato puree 1 pk garlic clove 1 tsp grated ginger 1 tbsp soy sauce pk chilli sauce to taste (I put a few drops) 1 pk small onion pk handful of peanuts

1. Dice the carrots and zucchini, grate the onion on a fine grater. Bring the stock to the boil and add the Vegetable Recipes, grated onion, puree, peanut butter, crushed garlic, grated ginger, chilli sauce, peanuts and simmer. 2. Taste and if it’s salty enough soy sauce you don’t even need to add it. Cook on low until the Vegetable Recipes are soft. Serve with rice and garnish with fresh peanuts. Enjoy 🙂
