Vegetable Carpaccio

One of the variations on carpaccio, this time from Vegetable Recipes.

Ingredients:

1 pk salad cucumbers 1 pk currants 1 pk lettuce 1 pc bunch of chives 6 tbsp wine vinegar 1 tablespoon French mustard 6 tbsp oil 40 g grated Parmesan ground pepper salt

Procedure:

1. Cut the cucumber and peeled kohlrabi into very thin slices
2. Rinse the lettuce and tear into pieces
3. Mix the vinegar with mustard, salt and pepper
5. Stir in the oil, add the chives and finally the Parmesan cheese, then leave the dressing in the fridge
6. Arrange the cucumber, kohlrabi and lettuce on plates and pour the cooled dressing over them.
