Vegan pancakes without eggs

700 ml rice milk 300 g spelt plain flour 1 packet vanilla sugar 1 pinch salt 2 KL baking powder

Did you think you needed eggs for pancakes until now? WRONG! I got an incredible craving for them once but not a single egg in the fridge… so I googled these absolutely divine pancakes and I have a feeling I won’t be making any others since I tried them 🙂 1. Whisk 500 ml of rice milk with warm water. 2. Put the sifted flour, baking powder, sugar and salt in a bowl. Of course, you can also use regular milk but in that case the pancakes won’t be vegan 🙂 3. Pour the milk into the flour and stir well to avoid lumps. 4. Fry the pancakes on both sides in a pan without oil. If you have a pan that tends to burn food, drizzle a little oil on the bottom. The pancake will be done on one side if there are lots of holes on the surface. 5. Just fill the pancakes with jam and we can eat! Enjoy!
