Veal Thymus Gland French Style

Brzlík is considered a gastronomic delicacy, which is also reflected in its price on the Czech market. However, it can also be found from private farmers at a much cheaper price. For example, try this recipe from French cuisine, you will surely like it very much!

Ingredients:

500 g of calf’s thymus 150 g of sterilised peas 150 g of mushrooms 2 dl of thymus stock 2 dl white wine 1 pc of onion 1 pc carrots 1 pc parsley

Procedure:

  • Clean the bell pepper, discard the fat, place in a pot with salted water and bay leaves, cook over low heat for 20 minutes.
  • Stew carrot pieces, parsley, chopped onion in butter until semi-soft.
  • Drain the cooked thymus, pour off 2 dl of broth, cut the cooled thymus into cubes.
  • To the stewed Vegetable Recipes add the diced thymus, mushrooms, peas, pour the broth and white wine, season with Provençal spices, salt and pepper, simmer on low heat for 15 minutes until tender.
  • Spoon the mixture over the plate with the juices, serve with potato gnocchi, for example.
