Vanilla sourdough pancakes

I finally got around to my first sourdough recipe. Ever since I started taking an active interest in this miracle, I feel like it’s sourdoughing the whole world and mainly my immediate surroundings. My friend, my doula, is sourdoughing and creating loaves of bread that I dream about – they are my métier . Sourdough was shown to me on the course by “super sourdough” Lenka Mančíková and I was totally blown away by the girls from the book Sourdough – Danka and Naty.
Sourdough is a staple to the housewife who bakes bread at home – sourdough is healthier than the one made from yeast.Of course, instead of yeast and even baking powder, you can use sourdough in many recipes and create a more digestible meal. “Give us this day our daily bread”, reads the prayer. And I try to bake mine almost every other day…bread has a symbol of home for me, the smell of the cut rye in the fields of my native Brodzany. Holidays. Nice memories that cause joy.
The first thing I did on my own was to start my rye sourdough starter. With it staring at me, nice and stable and ripe from the jar, I wanted to try it right away. I kneaded it into two breads, one rye-spelt, one gluten-free, and one for pancakes. I was really curious about the pancakes because I had never eaten sourdough “dolky” before. And straight vegan. I mean, without milk and egg. When I was making the dough for them, my granddaughter’s mom was over to “measure” them. Since she is a great cook, I was a little “gnashing” my teeth to see if she would like the food from me Oh…I was so happy- because they were divine. Even little Linda ate some and she doesn’t eat sweet like that much. She even decorated them with currants from the garden . I offer you pancakes tested by several generations, including the neighbors.
TIP: I used freshly ground golden flax for the sprinkles. It tastes similar to nuts and additionally has positive benefits for bowel peristalsis.

I know that to make bread, you make sourdough starter first. For the pancakes, I made the dough straight. I sifted the flour, mixed it with vanilla and honey and oatmeal. I poured the sourdough starter into the center and progressively added water to make a thick but pourable mixture. I stirred in a glass bowl and left it for an hour to autolyse (combine the flour with the water-decomposition). I covered the bowl with a plastic bag – it found its second use).

The bowl was in a warm place on the stove, After an hour, I stirred the mixture, added oil, salt and rum and left it for another hour on the heat. I was curious to see how the batter would work. You could see it fermenting nicely through the glass. Bubbles were forming first at the bottom, then progressively on top of the dough. You can make the dough in the evening and put it in the fridge, the fermentation will slow down and in the morning after 20 minutes after taking it out of the fridge you can make pancakes for breakfast.

I traditionally spooned the pancakes into the pan with an ice cream scoop. It’s a super dispenser. I don’t have a funnel pan . The tiny cookies baked very quickly. I baked the first one separately – test bake. I spread it with plum jam and sprinkled it with ground flax.

Do you know how nervous I was if it would be good? I immediately gave half of it to my mom and we took a bite at the same time. That smile…joy the biggest Try it out…you don’t need to make them often, but every now and then you can enjoy them like this and healthier with the whole family.

PS: the plate in the photo is a wedding gift from my husband. The napkin underneath, in turn, is from my friends the Kukls; it has had many a table set…Such symbols of the past are fitting for sourdough. My grandmother, whom I no longer recognize, also used to sourdough. She left a dough trough, which I ask from my mother. That dough would have connected generations of our family in it.
