This well-known and popular mince pie is especially suitable for Christmas or Easter. I love it for its simplicity and time-saving nature.

Mix the bulk ingredients: 100g icing sugar, 250g plain flour and 100g ground walnuts. Work the softened butter into the mixture by hand. Place the prepared dough in a bag and let it rest in the refrigerator for at least 1 hour.

On a floured board, roll out the chilled dough slightly. Cut off the dough in pieces, roll into balls about 1.5 cm in diameter, shape into rolls and place on a baking tray lined with baking paper.

Place the sheet in the oven preheated to 175 C and bake for about 8-10 minutes. While baking, make the confectioners’ sugar by mixing 100g icing sugar and vanillin sugar.

After removing the rolls from the oven, let them cool on the baking sheet for about 3-5 minutes to firm up and finally, while still warm, carefully coat them in the prepared sugar flour. Enjoy!
