Unbaked white chocolate fruit cake
ingredients
500 g Mascarpone 500 ml whipped cream 200 g white chocolate (the best is Fin Caré from Lidl, do not use Milka) 2 packets round biscuits fruit marrow fruit (for example strawberries, blueberries, jus, blackberries…) for decoration (optional) long biscuits or unfilled tubes (optional) 1 can of canned mandarin oranges (optional)

This cake is special because not a pinch of sugar goes into it. My mom found the recipe for the buttercream in a magazine and used it in another cake. She thought it must be a good buttercream and figured it would make a great combination with biscuits and fruit marrow, of which we had a freezer full at the time. The next birthday in the family she surprised us with this great fruit cake. Everyone was freezing up behind their ears and the cake disappeared like a ghost. After that, everyone was just asking for the recipe. Since then, this cake has been a regular part of our family celebrations and other appropriate occasions… 🙂

First we make the white chocolate cream. Melt the chocolate in a water bath and let it cool down a bit otherwise lumps will form in the cream. We use Fin Caré chocolate from Lidl, it has worked well for us. Milka, for example, does not melt well. If the chocolate is cold, whip the whipped cream. When it is whipped, add the mascarpone and mix well. Finally, add the white chocolate and mix by hand. The cream is ready 🙂

Place the round biscuits on the bottom of the cake tin. If you want to make the cake look more beautiful and festive, you can place unfilled tubes or long biscuits (standing up) around the cake. Then spread a layer of cream on top of the round biscuits. Cover again with a layer of biscuits. Now spread the fruit pulp on top of the biscuits. I use either strawberry or jus (the latter is more acidic). Put another layer of cream on top of the marrow. And alternate… biscuits, marrow, cream…until the entire cake tin is filled. When I use strawberry marrow, I sometimes add a layer of cooked mandarin oranges, they go great with the marrow. The last layer should be buttercream to make the cake look good.

Finally decorate the cake. Either with different small candies like colored beads, colored hearts, chopsticks. Or prepared fruits. so strawberries, raspberries, blackberries, blueberries, jus… It’s up to you to make it to your liking. Finally, put the cake in the fridge to harden.
