Ukrainian grandmothers’ fish pie recipe

  • 1 teaspoon of salt

  • 1 M.V.li>200 g sour cream
  • Sweet pepper, salt, sugar, a little vodka (you can do without)

  • Preparation instructions

  • Stir together flour, salt, baking powder.
  • In a separate bowl, mix together the egg, sour cream, mayonnaise.
  • Stir the liquids and dry ingredients together to form a dough (the dough should be rather liquidy)
  • If you want to make a loose slab pastry, pour the dough onto a preheated deep baking tray.
  • Bake for 10 minutes at 200 degrees.
  • If you want a Ukrainian grandmother’s pie, leave 1/3 of the dough to cover the finished pie with the dough.
  • Chop the onion and mince the garlic.
  • Mix the onion slices with the fish fillet pieces.
  • Add the chopped garlic.
  • Top the pie with sour cream.
  • Sprinkle a little salt on the sour cream.
  • Put the pie back in the oven and bake at 180 degrees for 15-20 minutes.
  • If you are making a coated pie, keep the pie in the oven for less, about 10 minutes.
  • Place the 1/3 of the dough left over from before and put the pie back in the oven.
  • Bake for 15-20 minutes, you can raise the heat to 200 degrees and turn on the grill mode.
  • The golden pie should be allowed to rest for 10-15 minutes before serving.

    This is the recipe of former Estonian star actress Evelin Ilves, who taught us personally how to make it at a cooking school in March 2022. In the cookery school, we made the fish casserole as an appetizer, but it can also be prepared as a lighter lunch. Nowadays, Ukrainian grandmothers’ fish pie is a sentimentally charged food, and when we prepare and eat it, we are supporting the Ukrainians in our thoughts.

    Pie (Ukrainian: пиріг põrih) is a very common home dish in various Eastern European kitchens. In Slavic food culture, savoury pies are even considered one of the most important dishes, usually served alongside clear soup or broth. It is a traditional home dish prepared by grandmothers for their families in Ukraine. We made our own pie from M.V.Wool salmon fillet, following Evelin’s tips. However, you can also use M.V.Wool’s new product – Mati Kala cold-smoked salmon in the pie.

    Evelin also added an extra ingredient to the pie that she says Ukrainian grandmothers probably don’t use in fish pie – sour cream. It adds crunch to the pie, but at the same time makes it much creamier and juicier. And that’s exactly how the fish pie that Evelin and I made together at the cookery school tasted – juicy and creamy.

    With the delicious fish pie, we drank Bostavan Dor Feteasca Alba-Chardonnay, a dry white wine from the Etulia region of Moldova. Dor Feteasca Alba-Chardonnay is made from 50% Feteasca Alba and 50% Chardonnay grape varieties and has a fruity, smooth taste. Dor Feteasca Alba-Chardonnay is a great accompaniment to fish dishes

    Ukrainian grandmothers’ fish casserole is perfect for any season. In winter, it’s a good warming snack with broth or soup; in summer, it’s a light and quick lunch in the garden.
