Ucha
Traditional Russian fish soup. There are mentions of cooking ucha in written documents from the 11th century, at that time ucha was called meat and chicken broth, but only from the 15th century ucha means only fish soup in Russia. The recipe is made from carp, but other types of fish can also be used.

Procedure:
1. Put cleaned fish heads, tails, roe or milt into lightly salted water, add bay leaf, whole pepper and boil everything until tender
2. Drain the cooked fish parts, set the broth aside and peel the meat from the heads and tails
3. Add chopped potatoes, onions and root Vegetable Recipes to the fish broth, cook until soft
4. When the potatoes and Vegetable Recipes are soft, add tomato paste, chopped cucumbers, pour the pickle from the cucumbers and boil everything briefly
5. Finally, add the fish meat, roe or milt, 1 teaspoon of chopped dill, season with pepper and salt and serve the soup hot.
