Tyrolean Speck Dumplings

One of the variations for tasty dumplings flavoured with bacon.
Ingredients:
Procedure:
1. Cut bacon and preferably day-old rolls into cubes
2. Place the bacon and lard in a baking dish or pan in the oven to render the bacon and lard, then add the bread cubes and let them toast, remove the baking dish and let cool
3. Add the coarse flour to the cooled base, add the diced smoked pork belly or leftover smoked pork, season with salt, pepper, a pinch of mace, pour over the lukewarm milk in which we have beaten the eggs
4. Cook the Tyrolean dumplings in boiling salted water for about 12-15 minutes.
Recommendation:
Serve the Tyrolean dumplings with, for example, sauerkraut, topped with fried onions in lard.
