Duck stuffed with apples, baked until golden brown.

Procedure:
1. Place the duck in a roasting tin, cover with a little water, add wine vinegar, butter, pepper and roast at 180 °C until tender, basting occasionally with the stock and basting with water as needed. Remove the duck, carve, remove the peppercorns, stir the jelly into the stock, return the duck portions and reheat.
Recommendation:
Serve with roasted potatoes garnished with baked apples.
