Tuscan vegetable soup

Dice the onion and cut the peppers into strips. Chop the celery and tomatoes. Fry the onions in the oil. Add the peppers, celery and tomatoes. Bring to the boil and cook for 10 minutes. Pour in the stock, season with salt and pepper and cook for 15 minutes. Beat the eggs, add the Parmesan cheese, set the soup aside and add the eggs and cheese. Toast the bread on both sides and place in the soup on a plate.
