Turnip soup – Busecca
ingredients
750 g stick 100 g smoked meat 50 g bacon 4 pcs cloves 2 pcs onion 2 cloves garlic parsley salt ground black pepper parmesan tomato puree sage
procedure
Put the pre-cooked chopped handles in salted water, add the cleaned onion which you cut into quarters, cloves and cook until soft. Chop the bacon finely and put it in a frying pan and fry the chopped meat or ham in it together with the grated garlic, chopped parsley and sage. Add the boiled handles, simmer a little, stir in the purée, pour in the water in which the handles were boiled and simmer some more. Finally, season with pepper and sprinkle with Parmesan cheese.
