Turkey soup
A good turkey soup is easy to make. It’s packed with vegetables and sour cream for a delicious flavour. It is best to buy the turkey unmarinated.
Ingredients for six
140g bacon 300g turkey breast fillets 2 tbsp olive oil 4 potatoes 2 onions 1 l chicken stock (eg. 1 red pepper 3 sprigs of celery (can be cooked in butter) 1 tbsp; 1 tbsp tomato puree 1 tbsp sour cream 1 tbsp paprika powder 1 tsp cane sugar tabasco, salt and pepper basil
Place the chopped bacon and onion in a cold pan and start heating. When the bacon starts to brown, add the shredded turkey. Take a little water to the surface.
Season with sugar, salt, paprika, pepper and tomato paste. The turkey must be cooked until it is raw.
Heat in a heavy-bottomed saucepan. Freeze the chopped potatoes for a moment. Then pour the chicken stock into the pan.
Cook for 10 min. Pour the meat from the pan into the soup. Wait for the water to boil again, then add the chopped peppers, celery and spices. Season with cornflour and cook for a couple of minutes.
Finally, add the sour cream to the turkey soup. Stir well and garnish with fresh basil.
