Turkey balls with tomato sauce

500 g minced turkey meat 2 wholemeal bread 2 pcs egg 2 pcs small onion 1 pcs chilli pepper 2 cloves garlic 1 tbsp mustard pcs breadcrumbs pcs vegetable oil pcs salt, black pepper, parsley
Parsnip sauce
2 tbsp extra virgin olive oil 1 pk onion 2 cloves garlic 1/3 pk pepper sausage 2 cans peeled tomatoes 500 ml vegetable stock 1 tsp granulated sugar 1 tsp balsamic vinegar pk salt, ground black pepper, dried basil

This is a mildly dietary variation on the classic meatballs. But in our house, they always end up in a white baguette or on pasta with a dollop of cheese anyway. But they’re awesome. Give them a try!

Prepare and clean the ingredients for the meatballs.

Place the meat, bread, eggs, onion, garlic, chilli, mustard and spinach in a food processor and blitz to a paste. Season with salt and pepper.

Shape the mixture into small balls (add a little breadcrumbs if too sticky) and place on a baking tray lined with baking paper.

Spray with oil and bake at 180°C for about 25 minutes.

Prepare the ingredients for the tomato sauce. Oil, onion, garlic, peeled tomatoes, sausage, stock, sugar, balsamic vinegar, salt, pepper and basil.

Fry onion and garlic in oil. Add the finely chopped pepper sausage. When the sausage starts to crumble, add the tomatoes and stock. Season with salt and pepper and let bubble for about 30 minutes. Then set aside, add the sugar, vinegar and basil. Taste and season if necessary. You may or may not blend with a stick blender.

We like it best in a baguette, baked with cheese in the oven under the grill.

And if you have leftover balls and sauce they will be really great with pasta and parmesan cheese.
