Tuna stew

The tuna stew “Marmitako”, cooked Spanish-style in a clay pot, is one of those easy dishes that you can put together quickly and bake in the oven while you’re in the sauna.
Ingredients for four
200g tuna fillet or 2 cans of canned tuna 4 large potatoes 1 bell pepper 2 onions 2 cloves of garlic2 tomatoes 1 dl olive oil 1/2 lemon salt and pepper
Peel the potatoes and cut into thumb-size pieces. Dice peppers and onions. Dice myös tomatoes.
Use a knife blade to pound the garlic cloves into a slap. Place the garlic in the bottom of the oven pan (a flat Spanish clay pot is an incredibly versatile gadget and a good buy).
Add the rest of the vegetables to the pot, a glass of water and a generous sprinkling of olive oil. Stir to combine.
Add small pieces of tuna to the pot. Squeeze the lemon juice into the acid. Season generously with salt and pepper.
Bake the tuna casserole in a 170C oven for about an hour to allow the potatoes to cook until soft.
