Tuna pasta
This double tuna pasta is so delicious that it’s perfect for a party. Invest in responsibly caught tuna.
Ingredients for four
1 bunch of tuna chunks 2 dl dry white wine 1 large onion 3 cloves of garlic 1 tbsp; 3 tbsp olive oil 2 dl tomato paste 1 handful kalamata olives salt pepper Leaf parsley Spaghetti or linguine
Peel and chop the onions as finely as you can. Mandolin is a good help.
So put the pan on the stove and add the onion mixture. Start to simmer slowly. Bring the pasta water to the boil.
When the onions start to brown, pour the wine into the pan. Bring to the boil until the liquids have reduced to a simmer.
Place the tomato paste in the pan and simmer for a few minutes until the sauce begins to thicken. Then add the tuna in fair chunks with its juices.
When the pasta is al dente, stir it into the pan with the sauce. Toss in a few olives and garnish with parsley.
Serve the tuna pasta straight from the pan.
Soak the tuna in the saucepan and serve with the sauce.
