Healthy and delicious tasting tuna pancakes.
1. Remove the tuna from the brine, so that only the dry crumb remains. 2. Put it in a bowl, add 1 egg, chickpea flour (I make flour by grinding dried chickpeas), salt, pepper and herbs to taste. 3. Make a stiff dough, which we dilute with a little water, but not too much!! So that the dough has a consistency suitable for shaping pancakes. 4. Form small patties on a heated, coconut-oil-coated frying pan and fry on each side until crispy. This batch will yield about 8 pancakes. 5. If you don’t have chickpea flour or dried chickpeas to make the flour, you can also use buckwheat or other whole wheat flour. 6. Serve best with a mixed vegetable salad. Good taste
