Trout with pine nuts

4 pcs trout 2 tbsp plain flour 5 tbsp olive oil 1 clove garlic 2 tbsp thyme 1 pcs orange 1 pcs lemon 1 tbsp balsamic vinegar 4 cl sherry 2 tbsp pine nuts to taste salt, ground black pepper a little oil
procedure
1. Season the trout fillets with salt and pepper and roll in flour. Heat the oil in a frying pan and fry the fillets on both sides until golden brown. Place them in a baking dish. 2. Add the crushed garlic, thyme and oil to the fat and fry the mixture briefly. Pour in the lemon and orange juice, vinegar, sherry and season the marinade with salt and pepper. Let it stand and pour it over the fillets. Place them in the refrigerator and leave to rest for 24 hours. 3. Toast the pine nuts in a dry frying pan and serve them with the fillets, warmed in a frying pan.
